Tasty Tuesday - Leftover Turkey Souffle

This week's recipe is from my Grandmother's recipe box - a clever use for leftover Turkey.

Turkey Souffle

8 slices dried Bread
2 cups diced, cooked Turkey
1 cup chopped Celery
1/2 cup diced Onion
1/4 cup diced Red Bell Pepper
1/2 cup Mayonnaise
1 cup sliced Water Chestnuts
3 cups Milk
4 Eggs, lightly beaten
1 can Cream of Mushroom Soup
1/2 cup Grated Cheese (your choice, cheddar or swiss)
1/2 cup slivered Almonds
Paprika for garnish

Line 9x13 baking dish with 1/2 of the bread

In a bowl, combine Turkey, Celery, Onions, Water Chestnuts, Bell Pepper, Mayonnaise and Almonds.

Spread over the bread already in the baking dish, cover with remaining bread.

Combine eggs and milk; pour over bread in baking dish.

Refrigerate several hours to overnight (overnight is best).

Bake for 90 minutes at 325.

Remove from oven. Spread the Mushroom Soup over top and sprinkle with Cheese and sprinkle with Paprika.

Return to oven and bake 15 minutes longer.

Serves up to 12
