Celebrate Cinco De Mayo

Today is Cinco De Mayo - time for most of us to cozy up to a cold margarita and some guacamole - but could we do it just a little healthier?

Sure we can, the great folks at SELF Magazine sent over these awesome recipes for you to whip up this evening. Invite a few friends over and host your very own fiesta!



Springtime Sangria!

SELF Magazine’s twist on this traditional, tasty drink has 200 fewer calories than a margarita. OlĂ©!

1 ½ cups red or white wine
¾ cup orange juice .(no pulp)
¹/³ cup triple sec
¹/³ apricot brandy
¹/³ cup Sprite
1 apple, cored and diced
1 cup red or green (or mixed) grapes
½ small cucumber, peeled, seeded and diced
4-5 ice cubes

Guacamole con Frutas

Don't worry about the fat; it's mostly the healthy kind in the avocado. Mixing in fruits boosts this appetizer's fiber count.

Serves 4

INGREDIENTS

1 avocado (preferably Hass), diced
1/2 tablespoon minced red onion
12 black or red grapes, halved
1/2 cup diced peaches (or mangoes)
Pomegranate seeds (optional)

PREPARATION

1. Lightly mash avocado, onion and chile in a bowl. Mix in grapes and peaches. Add salt. Garnish with pomegranate seeds. Serve with baked chips.
