Fruit Salad.... "Yummy, Yummy!"

Years ago, when my kiddos were small and really into the Wiggles, we'd sing the fruit salad song - over... and over... and over.  So much that, to this day, when someone says the phrase "fruit salad" the first thing that pops into my head is "yummy, yummy!".

Here's a fruit salad recipe that truly deserves the phrase "yummy, yummy!" to follow it...




Creamy Fruit Salad

2  small boxes instant vanilla pudding
3  cups cold milk
1/2  12oz can frozen Pineapple Juice(concentrate), thawed
2  8oz cartons Pineapple Yogurt
2  8oz cans sliced Peaches, drained
3  cups sliced fresh Strawberries
2  baskets fresh Blueberries
2-3 cups Seedless Grapes, cut in half
2  large bananas, peeled and sliced

Chill all fruit

In a large bowl, beat pudding mix, milk and juice with an electric mixer on low for 2 minutes or until thickened - beat in yogurt by hand.

In another bowl, mix fuits and fold in pudding mixture.

Cover and refrigerate for 2 hours, but not longer than 4 hours as the mixture may become slightly "soupy" if it sits too long (it will still taste wonderful though!).

This makes a great breakfast too - you'll think of tons of ways to use this versatile salad.
