Let's go get some romanesco

by Leanne Ely

This beautiful vegetable is an easy one to get into kids. It is just so pretty! It's not broccoli. It's not cauliflower. So what the heck is it? It's an edible flower called romanesco! Well, depending on where you are.

In the US and Canada, it's called romanesco broccoli. In Germany, it's romanesco cabbage.

The texture of raw romanesco is a lot like cauliflower. When it's cooked, you'll know it's obviously related to broccoli.

You can find heads of romanesco that are purple. You can find them orange. They also come in shades of green and yellow. So many choices!

More than just a pretty face, romanesco is packed with fiber, protein, omega 3 fatty acids and many other nutrients, including:

*    Vitamins A, B1, B2, B3, B5, B6, B9 (Bingo!), C and K
*    Magnesium
*    Manganese
*    Phosphorus
*    Tryptophan
*    Potassium

All of these nutrients work together to help improve eye, lung, bone, heart , muscle, nerve and cell health. These nutrients lower cancer risks and protect against flu, colds and infections. They improve cholesterol levels, lower blood sugar, improve brain function and can even ease depression.

Wonderful in pasta, a stirfry, or just steamed as an attractive and nutritious side vegetable, romanesco is worth a try, wouldn't you agree?

Do your family members turn up their noses when you put a new vegetable in front of them, or are they more likely to try it?
