Quick & Easy Healthy Summer Recipes

Marcel’s Ranch Dressing For Veggie Straws

Makes about 1 1/4 cups
Ingredients
½ cup Greek style yogurt
½ cup low-fat buttermilk
¼ cup mayonnaise
1 teaspoons lemon juice
1 teaspoon lime juice
1 ½ teaspoon Dijon mustard
1 teaspoon garlic, smashed and finely chopped
2 tablespoons celery leaves, finely chopped
2 tablespoon fresh chives, sliced thin
2 tablespoons flat leaf parsley, finely chopped  
1 ¼ teaspoon salt
½ teaspoon freshly cracked black pepper
Directions
Mash together the garlic and salt in a medium bowl. Add the Greek yogurt, mayonnaise and buttermilk and whisk to blend.  Add the celery leaves, chives, parsley, lemon juice, lime juice, and black pepper.  Stir to blend.  Enjoy.


Apple Dip for Apple Straws

Makes about 2 cups
Ingredients
5 Granny Smith apples
Juice from 2 lemons
1 qt water
2 tbsp honey
1 tbsp butter
Salt (season to taste)
1 Star anise
1 Cinnamon stick
Directions
Peel and slice apples- reserve in lemon water (add the juice of 2 lemons to 1 qt of water) to prevent browning until complete.
Strain apples from water and place in microwavable container.  Cover by wrapping with plastic wrap several times to ensure a tight seal and microwave until soft and tender (a few minutes, depending on your microwave).
Blend apples with honey and butter in blender until a smooth puree is achieved, season lightly with salt and remix to combine.
Grate star anise and cinnamon over apple dip and enjoy with apple straws.
